Pay Attention to Baking Directions
When using a mix, make sure you do and follow the directions to a T! If the mix says “hand mix” then hand mix! If it says to mix with a mixer, then buzz away! Why is this important? The way you introduce air into the mix is an important factor! It is important in any baking process, but even more so in Gluten Free baking. In addition, be careful not to under or over mix, otherwise this can cause a baked good to fall in the center (very much like traditional baking, but Gluten Free baking is just all that more sensitive)
Don’t Use Hot Pans
If you are making more than one batch, wait until your pan has cooled before you re-use it. If you do not use a cooled pan, your product will have a different baking experience and the texture will be affected.
Under bake your Gluten Free Cookies
Under bake them slightly. They will look ‘almost done, but not quite’ in the center. Remove them from the oven and let them cook the rest of the way. This creates a much nicer cookie.  Remember, don’t remove them from the pan until they are fully cooled off.

An educated consumer now realizes that wheat is in much more than just bread or pasta. Thankfully, so do food manufacturers. They now offer an expanded line of gluten-free condiments.
Mustard, ketchup, mayonnaise, and sauces can all be found as gluten-free products now.
Even though many companies are listing products as gluten free, customers need to be vigilant. What consumers should really look out for is gluten cross-contamination. We have been hearing this term for awhile now: caramel candy bars may be processed with the same machines that process peanut candy bars, which may put those caramel candy bars at risk for peanut cross-contamination. This is a big “may” for those with severe peanut allergies, and the candy bar may still be labeled “contains no peanuts.”
In the same sense, you should read labels for potential gluten cross-contamination. For example, Grey Poupon is manufactured by Kraft, which may manufacture the product using the same equipment that makes its gluten products. They can classify the product as Gluten Free because they may meet regulatory standards at less than 20ppm. That said, for those with severe allergies to gluten, this still may not be enough. You may still need to make sure that the products you are buying to not carry any wheat warning at all on their labels. Look for products that do not say “MAY CONTAIN wheat” or “Processed in a facility that also processes Wheat”. Both of these statements are indicators that while the product may be certifiable as Gluten Free per regulatory standards, the products are being made in the same facility as those products that contain wheat.
 To be 100% certain you are eating gluten-free, look for products that are manufactured at a fully dedicated gluten-free facility.

When you slice your apples, make sure you slice them as thin as possible (using a mandolin is an even better option because you can get your apple slices paper thin).  If you do not have a mandolin, make sure your knife is extremely sharp. The thinner the slice, the less time they will need to bake.

  1. Preheat oven to 200 degrees F
  2. Using a sharp knife or a mandolin, slice apples thinly. Discard the seeds.
  3. Prepare a baking sheet with parchment paper and arrange apple slices on top without overlapping.
  4. Bake apples for 1 hour, then flip apples
  5. Continue to bake your apple slices for another 1 to 2 hours, flipping every 35 to 40 minutes, until apple slices have dried out and are no longer moist
  6. Remove from oven and allow to cool completely
  7. Store in an airtight container

The America's Test Kitchen Gluten-Free Flour Blend

According to America's Test Kitchen, the best gluten-free flours to bake with contain four ingredients — brown rice flour, white rice flour, potato starch and tapioca starch.

Makes 42 ounces (About 9 1/3 cups)
Be sure to use potato starch, not potato flour. Tapioca starch is also sold as tapioca flour; they are interchangeable.
24 ounces (4 1/2 cups plus 1/3 cup) white rice flour
7 1/2 ounces (1 2/3 cups) brown rice flour
7 ounces (1 1/3 cups) potato starch
3 ounces (3/4 cup) tapioca starch
3/4 ounce (3 tablespoons) nonfat milk powder
Whisk all ingredients together in a large bowl until well combined. Transfer to airtight container and refrigerate for up to 3 months.

Panic Attacks when exposed to Gluten

The old saying, "You are what you eat" should be brought back to everyday life. There is a correlation to our health based on what we eat. Gluten is one of those foods that affects my health in various ways.... digestive issues, esophagus pain, GERD, headaches, skin disorders and anxiety. 

Today's topic is Panic Attacks and the relationship to Gluten Exposure:

Panic Attacks....  I have had 6 of them in the last 12 days. Researching if it was all in my head or ..... Gluten Exposure. Well. low and behold, it IS the Gluten Exposure.  A panic attack is a sudden surge of overwhelming anxiety and fear. Your heart pounds and you can’t breathe. You may even feel like you’re dying or going crazy.

Symptoms of a Panic Attackheart palpitations, dizziness, shortness of breath, or feelings of unreality, chest pain, nausea, sweating, and shaking.

My research shows: 
Gluten Exposure can cause many Neurologic and Psychiatric Manifestations 
  • Anxiety Disorders

    Various types of anxiety are associated with gluten intolerance. One study found that CD patients were significantly more likely to have state anxiety when compared to controls, and that after 1 year on a gluten-free diet, there was a significant improvement in state anxiety symptoms  Other anxiety disorders such as social phobia and panic disorder have been linked to gluten response. Addolorato and colleagues  reported that a significantly higher proportion of CD patients had social phobia compared to normal controls. Gluten Exposure happens to the best of us..... Food Additives, Ingredient Lists not indicating Gluten or it's derivatives. I learned the hard way 2 weeks ago that the spices I added to the recipe I was making had flour added to prevent clumping of the spices. Guess what?! The flour was not listed on the ingredients! I investigated the manufacturer's website and under FAQ, there it was in the "how we ensure freshness".

Recent studies have strongly suggested that many, and possibly most, people who react badly to gluten may have a more challenging problem: sensitivity to a long list of foods containing certain carbohydrates.
In 2011, Dr. Peter Gibson, a gastroenterologist at Monash University in Victoria, Australia, and his colleagues studied 34 people with irritable bowel syndrome who did not have celiac disease but reacted badly to wheat, a gluten-rich grain. The researchers concluded that non-celiac gluten sensitivity “may exist.”
Many of their subjects still had symptoms on a gluten-free diet, however, which prompted a second study of 37 patients with irritable bowel syndrome and non-celiac gluten sensitivity who were randomly assigned to a two-week diet low in certain carbohydrates, collectively called Fodmaps.
All patients on the special diet improved, but got significantly worse when fed gluten or whey protein. Only 8 percent of the participants reacted specifically to gluten, prompting the researchers to conclude that Fodmaps, not gluten, accounted for most of the distress.
Fodmaps is an acronym for fermentable oligosaccharides, disaccharides, monosaccharides and polyols, sugars that draw water into the intestinal tract. They may be poorly digested or absorbed, and become fodder for colonic bacteria that produce gas and can cause abdominal distress. They are:
■ Fructose: A sugar prominent in apples, pears, watermelon, mangoes, grapes, blueberries, tomatoes and tomato concentrate, and all dried fruits; vegetables like sugar-snap peas, sweet peppers and pickles; honey; agave; and jams, dressings and drinks made with high-fructose corn syrup.
■ Lactose: The sugar in milk from cows, goats and sheep, present in ice cream, soft cheeses, sour cream and custard.
■ Fructans: Soluble fiber found in bananas, garlic, onions, leeks, artichokes, asparagus, beets, wheat and rye.
■ Galactans: Complex sugars prominent in dried peas and beans, soybeans, soy milk, broccoli, cabbage and brussels sprouts.
■ Polyols: The sugar alcohols (sweeteners) isomalt, mannitol, sorbitol and xylitol, present in stone fruits like avocado, cherries, peaches, plums and apricots.
